    Materials

    The Thermo Door & the handle are made entirely from a 3mm thick (0.12in) corten steel sheet.

    Corten is a steel alloy that forms a protective layer of rust on its surface. When you order the Thermo Door, you will receive it without any rust. As soon as you place your Thermo Door outside, where it will be subject to different weather conditions, the rusting process will set in. Depending on where you live, the process of turning from blank to rusty steel can take between a few months up to a year.

    The steel is meant to rust in order to form a protective coating. In the first phase of the rusting process, some flakes of rust might come loose, but this will stop after some time and the Thermo Door will get its final look.

    Fire & Smoke

    On the top of every outdoor oven, there is a little hook where you can hang the Thermo Door. In doing so, you close the opening of the oven, which activates the hidden chimney system. The hot air will still pass over the food, but instead of escaping through the front of the oven it will go up and over the top stone, then leaving through the two holes pierced in the backside of the oven.
    The Thermo Door is there to help you bake at lower temperatures, between 100 and 300°C. It keeps the heat in and shows what temperature you’re baking with.

    It is perfect for slow roasting different meats, fish, or vegetables. Also, many pizza styles are better prepared at lower temperatures.
    But be careful, don’t use the Thermo Door when you are stoking the flames for high-heat dishes, like steaks or Neapolitan pizza. When the flames are bigger, they need lots of oxygen as fuel.
    The same goes for the first 20 minutes of starting up the oven. Using the Thermo Door during the first 20 minutes will stop the oxygen intake and kill the flames, causing lots of black smoke and damaging your food as well the thermometer glass.
    So if you’d like a clean thermometer and a good relationship with your neighbours, use your Thermo Door wisely, and it will give you lots of joy and amazing wood-fired dishes.

    The Thermo Door consists of a metal door, thermometer, and a metal handle.

    You only need to screw the thermometer on to the metal door. No tools are needed. Assembly time is 30 seconds.

    I’m working closely with a third-generation steel company right here in the Netherlands. They make the plate for the Thermo Door and take great pride in doing so. Keeping the manufacturing local enables me to keep a close eye on quality making sure you can enjoy the best product possible. 

    Unfortunately, it’s impossible to have an affordable thermometer produced here in the Netherlands. But I’m happy to tell you I found a good and reliable partner in China. We have been working together for years and the results are great.
