The Pizza Calculator

We’ve all been there, struggling with pizza dough that’s too sticky, tough, or doesn’t rise the way we want. But what if there were a simple way to get it right every time? That’s where the Pizza Calculator comes in.

It’s not just another boring kitchen tool. This clever little helper does the hard work for you, figuring out the perfect ratios for your dough. And it’s smart: it considers how long you want to ferment your dough and even the temperature of your kitchen and fridge. All you have to do is follow along, and voilà, perfect pizza dough is just a few clicks away!

How does the pizza calculator work?

The Pizza Calculator was created out of the need for precision and consistency in pizza-making. At first, the ratios between flour, water, salt, and yeast were fixed, regardless of your situation. While this was helpful, it didn’t offer much flexibility. Now, the calculator has been upgraded and is far more advanced. It adjusts to your specific conditions, such as fermentation time and temperature—two crucial factors that greatly influence the flavor and texture of your dough.

The key here is fermentation—the time it takes for your dough to rise. This process is heavily influenced by the surrounding temperature. Higher temperatures make yeast work faster, while lower temperatures slows it down. This, of course, has a direct effect on the flavor and texture of your pizza dough. The Pizza Calculator accounts for all of these factors, giving you the ideal amount of yeast tailored to your unique situation.

On the website, you’ll find three different calculators, each with its own twist.

The three calculators:

1. Pizza Calculator

    • This calculator offers six different styles to choose from: Neapolitan style, New York style, Neapolitan Home Oven style, Canotto style, Tonda Romana style, and Gluten-Free style. Once you’ve picked your preferred style, you can then choose which type of yeast you want to use in your recipe. You can select from instant dry yeast, sourdough, or fresh yeast.
    • In addition to the standard ingredients like flour, water, salt, and yeast, you can also input other options like oil or sugar, depending on your recipe. Next, you choose how many pizzas you want to make and the desired weight of each dough ball. You can then use the sliders to set the fermentation time (you can choose room temperature, refrigeration, or a combination of both). The final step is to input the fermentation temperature. Once you hit the calculate button, your recipe will appear neatly under the title “Dough Recipe.”

2. Pan Calculator

      • The Pan Calculator works similarly to the Pizza Calculator but with a bonus: it helps you calculate the exact amount of dough needed for your pizza pan. Perfect for those who prefer pan pizzas! Just like the Pizza Calculator, you’ll put in the same basic details—number of pizzas, dough weight, fermentation time, etc.—but you’ll also add the dimensions of your pizza pan. After all the information is entered, you’ll receive a recipe tailored to your pan size and baking conditions.

3. Yeast Calculator

    • If you’ve ever found it tricky to measure small quantities of yeast because your kitchen scale only starts at 1 gram, you’re not alone. Pieter Städler realized this was a common problem for home bakers, so he came up with a brilliant solution: a yeast calculator that makes it super easy to measure out even the tiniest amounts of yeast without a scale.
    • Instead of relying on weight, this tool uses simple visual measurements. Here’s how it works: You enter the amount of yeast you need into the app using your smartphone or tablet. The app then displays a circle with a specific diameter on the screen. You gently sprinkle the yeast onto the circle until it’s fully covered. That’s it! The amount of yeast covering the circle is exactly the amount you need.
    • The best part is that it works on most devices, but you’ll need to calibrate it first. Calibration is easy—just use a standard-sized card like a credit card or bank card. This app is designed specifically for measuring dry yeast, making it an incredibly handy tool for anyone who loves baking.
