Ingredients
- 1 courgette
- 1 aubergine
- 3 ripe tomatoes
- 2 garlic cloves
- 3 sprigs of thyme
- Olive oil
- Maldon salt
- Sourdough bread
- 250 ml tomato sauce
- 1 burrata
- Basil
- Parsley
I love burrata, I love toast, I love ratatouille. Well….
InstructionsÂ
First, chop the courgette, aubergine, and tomatoes into pieces. Add them to a pan along with the garlic, a few sprigs of thyme, sea salt, and a drizzle of olive oil. Place the pan in the oven and cook for 5-6 minutes, or until the vegetables are tender. Then, add the tomato sauce and transfer the pan to the stovetop.
Next, prepare your sourdough toasts by cutting thick slices, drizzling with olive oil, and rubbing them with a garlic clove. Bake in the oven, turning them after 1.5 minutes.
For the burrata, mash it and season with some salt, pepper, and olive oil.
To assemble, place the burrata on the toast and top with some of the ratatouille. Finish with fresh basil and parsley.
