Ingredients

•⁠ ⁠2 red onions
•⁠ ⁠5 spring onions
•⁠ ⁠500g Brussels sprouts
•⁠ ⁠100g guanciale
•⁠ ⁠Olive oil
•⁠ ⁠Sea salt
•⁠ ⁠1 lemon
•⁠ ⁠Pecorino cheese

The most wintery vegetable there is with a beautiful salty Smokey taste of the guancale, the perfect wintery dish.

Instructions

Chop the red onions, spring onions, and Brussels sprouts into pieces and place them all in a cast-iron pan. Add the guanciale and a drizzle of olive oil, then place the pan in the oven. After about halfway through cooking, give the mixture a shake to ensure even cooking. This should take approximately six minutes. Finish with lemon zest and grating the Pecorino cheese on top.
